‘Introduction to Viennoiserie with Jamie Heffey’

This 2-day masterclass will be held at Pastry Academy UK situated in the prestigious district of Montpellier, Cheltenham, and will be hosted by founder of Pastille Bakery, Jamie Heffey.

An “Introduction to Viennoiserie” - this two day event will explore the core concepts of producing much-loved classics such as croissants and pain suisse, plus modern iterations of the classics including cruffins. Jamie will demonstrate how to create the perfect laminated dough, utilise it in a multitude of ways, and incorporate unique flavours to create delicious products.

This class will run between 9am & 4pm (approximately) on both days, but please allow for a slight overrun.

Please bring a notepad & pen for your own notes, although a booklet with the recipes & methods will be provided. A break will also be provided for lunch whether you choose to bring some with you, or enjoy one of the many eateries we are lucky enough to be surrounded by. Please bare in mind when planning that refreshments and lunch will not be provided, but you are welcome to bring them along with you.

This class is ideal for patisserie chefs, enthusiastic individuals, and those wanting to understand viennoiserie, plus the full concepts of what Jamie has to offer. No experience is necessary and rest assured we always have a varied selection of participants - our courses truly are open to all! The class is very personal and is limited in number to ensure that all participants get the most out of the experience.
