‘Modern Patisserie Through Science with Fred Csibi-Levin’

This 3-day course will be held at the Pastry Academy UK situated in the prestigious district of Montpellier, Cheltenham, and will be hosted by scientist turned pastry chef, Fred Csibi-Levin.

“Discover Modern Patisserie Through Science” is a concept curated by pastry chef Fred Csibi-Levin, which demystifies French pastry with a scientific approach. Ph.D. scientist turned pastry chef, Fred began by investigating French macarons, which opened his eyes to a whole new perspective on the science of baking and, as a scientist, he got hooked, constantly intrigued by the complexity involved with the art and science of creating desserts.

This masterclass will focus on the use of science within French classics - choux pastry, entremets, tarts, travel cakes and more!

This class will run between 9am & 5pm (approximately) on both days, but please allow for a slight overrun.

Please bring a notepad & pen for your own notes, although a booklet with the recipes & methods will be provided on the day. A break will also be provided for lunch whether you choose to bring some with you, or enjoy one of the many eateries we are lucky enough to be surrounded by. Please bare in mind when planning that refreshments and lunch will not be provided, but you are welcome to bring them along with you.

This class will primarily be demonstration style, but there may be a chance to get hands-on if the chef wishes. The creations from the class will be available to take away after the event so you can enjoy them in all their glory! The class is very personal and is limited in number to ensure that all participants get the most out of the experience.

This class is ideal for patisserie chefs, enthusiastic individuals, and those wanting to understand the full concepts of what Fred has to offer. No experience is necessary and rest assured we always have a varied selection of participants - our courses truly are open to all!
